Mr. Cheesy owner Daniel Fox said: “As we come out of lockdown this is the perfect time to offer Preston Docks visitors, shop and office workers a new outdoor food and beverage experience.
“We are easy to find and perfectly located at the gateway to the Docks. Customers can pop in to grab a bite before a walk round the dockland basin or during a lunch break from the offices.
“We’re looking forward to turning new friends into regulars and hope Prestonians will love our food.”

Despite not having any experience in food, he hired manager Kally Draypott, who is originally from New York, to run the business day to day.
Kally, 25, said: "Dan got the idea for a food truck down at the docks because it is a great location. He hired me to run it for him, all of my experience is in front of house and I have managed bars and restaurants all my life.
"We are in a great location at the docks, it is a perfect position for people to come and get quick lunches and go for a walk, especially in the nice weather.

"We have only been open a week and it has been a lot busier than we expected. Thankfully because of the amazing weather, people have been enjoying the outdoors and going for walks around the docks, so it has been a great start for us.
"We saw the lockdown as an opportunity to start the business because people can only eat outside currently and they might want somewhere to get their lunch without queuing up or needing a booking."
The iconic van was specially imported from France. It had previously been used by Michelin before being transformed into the new home for cheese toasties in Preston.
